At Limo Cocina Peruana & Pisco Bar in Cusco, Peru I sampled this fruity cocktail that has quite a powerful kick thanks to the Aji Limo, a flavorful Peruvian chile pepper.
Ingredients:
-Aji Limo macerated in 2 oz of quebranta pisco
-1 oz fresh Passionfruit juice
-1 oz fresh Mandarin juice
-1 oz simple syrup/jarabe de goma
-one half of a lime
To make: Mix all ingredients, including a squeeze of the lime, with ice in a cocktail shaker. Strain into a martini glass. Serve.

If Aji Limo is as delicious in this cocktail as Chipotle is in an ale, then I’m sold.
